These Philly Cheesesteak Sloppy Joes are the perfect mashup of two classics—juicy ground beef cooked with sautéed peppers, onions, Worcestershire, and melty provolone, all piled onto toasted buns. Fast, comforting, cheesy, and perfect for busy weeknights!

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 teaspoon garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices provolone cheese
  • 46 hamburger buns, toasted
  • Butter for toasting buns (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers and cook until softened, about 4–5 minutes.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in garlic, salt, pepper, and Worcestershire sauce.
  4. In a small bowl, whisk cornstarch into the beef broth until dissolved. Pour into the skillet.
  5. Simmer for 3–5 minutes until thickened and saucy.
  6. Lay provolone slices over the mixture and let them melt, then stir to combine into a creamy, cheesy filling.
  7. Toast the buns with butter if desired.
  8. Spoon the cheesy beef mixture onto buns and serve warm.

Notes

For extra richness, top with additional provolone slices before serving. You can use red or yellow peppers for more sweetness. This filling reheats well and is great for meal prep.
