These Philly Cheesesteak Sliders are savory, cheesy, and packed with tender sliced beef, sautéed onions, and melted provolone on soft slider rolls. Perfect for parties, game day, or a fun dinner.

  • 1 lb thinly sliced ribeye or sirloin steak
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced (optional)
  • 12 slider buns or small dinner rolls
  • 6 oz provolone cheese, sliced
  • 2 tbsp butter, melted
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onions (and bell peppers if using) and sauté 5–6 minutes until soft and lightly caramelized.
  3. Add sliced steak to the skillet and cook 3–4 minutes until browned. Season with salt and pepper.
  4. Slice slider buns horizontally and place on the baking sheet. Layer steak and sautéed onions on the bottom halves.
  5. Top with provolone slices and cover with the top halves of the buns.
  6. Brush melted butter mixed with garlic powder over the tops.
  7. Bake 10–12 minutes until cheese melts and tops are slightly golden.
  8. Serve warm, optionally with pickles or your favorite dipping sauces.

Notes

These sliders are best served fresh but can be assembled ahead of time and baked just before serving. For extra flavor, add sautéed mushrooms or a drizzle of cheese sauce.
