Description

Deliciously sweet pecan pie cookies with a buttery shortbread base and a gooey pecan topping — perfect for holidays or dessert tables.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup brown sugar, packed
  • 1/4 cup corn syrup
  • 1 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together 1 cup butter and granulated sugar until light and fluffy. Beat in egg and vanilla extract.
  3. Mix in flour and salt until a soft dough forms.
  4. Roll dough into 1-inch balls and place on prepared baking sheets, slightly flattening each ball.
  5. In a small bowl, mix chopped pecans, brown sugar, corn syrup, and 1 tbsp melted butter.
  6. Top each cookie with a spoonful of the pecan mixture.
  7. Bake for 12–15 minutes, until the cookies are golden brown and the topping is bubbly.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra richness, add a pinch of cinnamon to the pecan topping. Store cookies in an airtight container for up to 5 days.
