- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- For the Pecan Pie Filling
- 1 cup chopped pecans
- 1/2 cup light corn syrup
- 1/2 cup brown sugar
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and brown sugar in a bowl until light and fluffy.
- Mix in eggs and vanilla until smooth.
- Whisk together flour, baking powder, and salt. Gradually add to wet ingredients and mix until a soft dough forms.
- In a separate bowl, combine chopped pecans, corn syrup, brown sugar, melted butter, vanilla, and salt to make the filling.
- Scoop cookie dough onto the baking sheet. Press a small indentation in each and fill with pecan pie mixture.
- Bake 12–15 minutes until cookies are set and edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, toast pecans lightly before adding to the filling. These cookies can be stored in an airtight container for up to 5 days or frozen for longer storage.
