  • 1/4 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • Cheesecake Filling:
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • Pecan Pie Topping:
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/3 cup heavy cream
  • 2 cups pecan halves
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven: Heat oven to 325°F (163°C). Wrap the bottom of a 9-inch springform pan with foil to prevent leaks.
  2. Make crust: Mix graham crumbs, brown sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes and set aside.
  3. Cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Mix in vanilla and sour cream until just combined. Pour over crust.
  4. Bake: Place pan in a water bath and bake for 60–70 minutes, or until the center is just set. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. Pecan pie topping: In a saucepan, melt butter over medium heat. Stir in brown sugar and heavy cream. Bring to a simmer and cook for 2–3 minutes until thickened. Stir in pecans, cinnamon, and salt. Cool slightly.
  6. Assemble: Spoon pecan topping over chilled cheesecake. Slice and serve.

Notes

For easier slicing, run a knife under hot water and wipe dry before cutting. Cheesecake can be made a day in advance for the best flavor.
