  • Author: recipeinspire
  • Total Time: 2 hours 55 minutes (includes chilling)
  • Yield: 12 servings 1x

Description

This Patriotic Poke Cake is a colorful and festive dessert perfect for 4th of July celebrations. Moist white cake is poked and filled with sweet strawberry gelatin, then topped with whipped cream and decorated with blueberries and strawberries to create a beautiful red, white, and blue presentation.

Ingredients

Scale
  • 1 white cake mix (plus ingredients to prepare as directed)
  • 1 package (3 oz) strawberry gelatin (Jell-O)
  • 1 cup boiling water
  • 2 cups cold water
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Bake the Cake: Prepare and bake the white cake according to package instructions in a 9×13-inch pan. Allow to cool completely.
  2. Make the Gelatin: Dissolve strawberry gelatin in boiling water. Stir in cold water. Let cool slightly.
  3. Prepare the Cake for Poking: Use the handle of a wooden spoon or a skewer to poke holes evenly all over the cooled cake.
  4. Pour Gelatin: Slowly pour the cooled but still liquid gelatin over the cake, letting it seep into the holes. Refrigerate until set, about 2 hours.
  5. Make Whipped Cream: Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  6. Decorate: Spread whipped cream over the set gelatin cake. Top with fresh strawberries and blueberries arranged to resemble the American flag.
  7. Chill and Serve: Refrigerate until ready to serve. Cut into squares and enjoy!

Notes

For best results, allow the gelatin to cool before pouring over cake to prevent melting. Use fresh berries for vibrant colors. This dessert can be prepared a day ahead for convenience.
