  • 3 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (Panko works best)
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine Parmesan, breadcrumbs, garlic, Italian herbs, salt, and pepper.
  3. Brush zucchini slices lightly with olive oil on both sides.
  4. Coat each zucchini slice with the Parmesan-breadcrumb mixture and place on the baking sheet.
  5. Bake for 15–20 minutes until golden and crispy.
  6. Garnish with fresh parsley and serve warm.

Notes

For extra crispiness, broil the zucchini for the last 1–2 minutes. You can also add a pinch of red pepper flakes for a slight kick.
