- Brush zucchini slices lightly with olive oil on both sides.
- Coat each zucchini slice with the Parmesan-breadcrumb mixture and place on the baking sheet.
- Bake for 15–20 minutes until golden and crispy.
- Garnish with fresh parsley and serve warm.
Notes
For extra crispiness, broil the zucchini for the last 1–2 minutes. You can also add a pinch of red pepper flakes for a slight kick.
