- 1 cup grated Parmesan cheese
- ½ cup panko breadcrumbs
- 2 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil, divided
- 1 lb mixed vegetables (broccoli, bell peppers, zucchini), chopped
- Optional garnish: fresh parsley or lemon wedges

- In a shallow bowl, combine Parmesan, panko, garlic powder, oregano, salt, and pepper.
- Brush chicken breasts with 1 tbsp olive oil, then dredge in the Parmesan mixture, pressing lightly to adhere.
- Toss vegetables with remaining olive oil, salt, and pepper and spread on the baking sheet.
- Place coated chicken breasts on the sheet pan among the vegetables.
- Bake 20–25 minutes until chicken is cooked through and vegetables are tender, turning vegetables halfway if needed.
- Optional: garnish with fresh parsley or lemon wedges before serving.
