  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp dried basil (or 1 tbsp fresh basil, chopped)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 3 tbsp olive oil or vegetable oil
  • Lemon wedges, for serving

  1. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, basil, garlic powder, salt, and pepper.
  2. Dredge each chicken cutlet in flour, shaking off excess, then dip into eggs, and finally coat evenly with the panko-Parmesan mixture.
  3. Heat oil in a large skillet over medium heat. Cook cutlets 3–4 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C).
  4. Drain on paper towels if desired, serve immediately with lemon wedges.

Notes

For extra crispiness, bake the cutlets at 400°F (200°C) for 5–7 minutes after pan-frying. Swap basil with oregano or thyme for a different flavor profile.
