  • 1 lb boneless, skinless chicken breasts, pounded to even thickness
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 tbsp fresh basil, chopped (or 1 tsp dried)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 eggs, beaten
  • 23 tbsp olive oil or butter, for frying
  • Optional garnish: fresh basil or lemon wedges

  1. In a shallow bowl, mix Parmesan, breadcrumbs, basil, garlic powder, salt, and pepper.
  2. In another bowl, beat the eggs.
  3. Dip each chicken cutlet into the egg, then coat with the Parmesan-breadcrumb mixture. Press gently to adhere.
  4. Heat olive oil or butter in a large skillet over medium heat.
  5. Cook chicken cutlets 3–4 minutes per side until golden brown and cooked through (165°F / 74°C).
  6. Remove from skillet and let rest 2 minutes before serving. Garnish with fresh basil or lemon wedges if desired.

Notes

For extra crispiness, bake coated cutlets in a preheated oven at 400°F (200°C) for 10–12 minutes after pan-frying. Serve with pasta, salad, or roasted vegetables.
