- 1 lb boneless, skinless chicken breasts, pounded to even thickness
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 2 tbsp fresh basil, chopped (or 1 tsp dried)
- 1 tsp garlic powder
- Salt and pepper, to taste
- 2 eggs, beaten
- 2–3 tbsp olive oil or butter, for frying
- Optional garnish: fresh basil or lemon wedges

- In a shallow bowl, mix Parmesan, breadcrumbs, basil, garlic powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken cutlet into the egg, then coat with the Parmesan-breadcrumb mixture. Press gently to adhere.
- Heat olive oil or butter in a large skillet over medium heat.
- Cook chicken cutlets 3–4 minutes per side until golden brown and cooked through (165°F / 74°C).
- Remove from skillet and let rest 2 minutes before serving. Garnish with fresh basil or lemon wedges if desired.
Notes
For extra crispiness, bake coated cutlets in a preheated oven at 400°F (200°C) for 10–12 minutes after pan-frying. Serve with pasta, salad, or roasted vegetables.
