Ingredients

  • 1 medium head green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 3 garlic cloves, minced
  • 1 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 6 cups low-sodium vegetable broth or water
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Freshly ground black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, zucchini, and cabbage. Cook for 5–7 minutes, stirring occasionally.
  3. Pour in diced tomatoes and low-sodium vegetable broth. Stir in thyme, basil, and black pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Adjust seasoning with pepper and fresh herbs before serving.

Notes
