- 1 medium head green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes, no salt added
- 6 cups low-sodium vegetable broth or water
- 1 tsp dried thyme
- 1 tsp dried basil
- Freshly ground black pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté for 2–3 minutes until fragrant.
- Add carrots, celery, zucchini, and cabbage. Cook for 5–7 minutes, stirring occasionally.
- Pour in diced tomatoes and low-sodium vegetable broth. Stir in thyme, basil, and black pepper.
- Bring the soup to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Adjust seasoning with pepper and fresh herbs before serving.
Notes
