- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, diced
- 1 medium potato, peeled and diced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and chopped
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 4 cups vegetable broth
- 1 cup milk or plant-based milk (unsweetened)
- 2 tbsp flour (or use gluten-free flour)
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes.
- Stir in garlic, potatoes, zucchini, and green beans. Cook for another 3–4 minutes.
- Sprinkle flour over the vegetables and stir well for 1 minute.
- Gradually pour in vegetable broth while stirring to prevent lumps. Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until vegetables are tender.
- Stir in corn, peas, and milk. Simmer another 5 minutes until heated through and creamy.
- Taste and adjust seasoning. Serve warm with crusty bread.
Notes
For extra richness, stir in 2 tbsp cream cheese or a splash of cream. For a thicker texture, use an immersion blender to partially puree the soup.
