- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 potato, diced
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- 1/2 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
- Add zucchini, broccoli, cauliflower, and potato. Stir to combine.
- Pour in vegetable broth, add thyme, parsley, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes until vegetables are tender.
- Use an immersion blender to partially puree the soup, leaving some chunks for texture.
- Stir in heavy cream or coconut milk and heat through for 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
This soup is made entirely in one pot for easy cleanup. For a vegan option, use coconut milk instead of heavy cream.
