  • 1/2 cup heavy cream or coconut milk
  • Salt and pepper, to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until fragrant and translucent.
  2. Add vegetables: Stir in carrots, celery, zucchini, and cauliflower. Cook for 5 minutes, stirring occasionally.
  3. Add broth and simmer: Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  4. Blend soup: Use an immersion blender to puree soup until creamy but still slightly chunky, or blend partially if preferred.
