- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium zucchini, chopped
- 1 cup cauliflower florets
- 4 cups vegetable broth
- 1/2 cup heavy cream or coconut milk
- Salt and pepper, to taste
- Fresh parsley or thyme for garnish
Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until fragrant and translucent.
- Add vegetables: Stir in carrots, celery, zucchini, and cauliflower. Cook for 5 minutes, stirring occasionally.
- Add broth and simmer: Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Blend soup: Use an immersion blender to puree soup until creamy but still slightly chunky, or blend partially if preferred.
- Add cream and season: Stir in heavy cream or coconut milk. Heat through without boiling. Season with salt and pepper.
