- Sauté aromatics: In a large oven-safe Dutch oven or casserole dish, heat olive oil over medium heat. Add onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add liquids & veggies: Add diced tomatoes, broth, Italian seasoning, salt, pepper, carrots, and zucchini. Stir to combine.
- Add ravioli: Gently stir in frozen ravioli, making sure they are submerged in the liquid.
- Bake: Cover and bake in the preheated oven for 25–30 minutes, until ravioli are cooked and vegetables are tender.
- Serve: Ladle soup into bowls, sprinkle with Parmesan cheese, and garnish with fresh herbs.
Notes
Use any variety of frozen ravioli you like—cheese, spinach, or meat. For extra flavor, add a splash of balsamic vinegar or a pinch of red pepper flakes. Leftovers reheat well on the stovetop.
