  • 12 oz cheese ravioli (fresh or frozen)
  • 6 slices bacon, chopped
  • 3 cloves garlic, minced
  • 3 large egg yolks + 1 whole egg
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 tsp black pepper
  • Salt to taste
  • Optional: parsley for garnish

  1. Cook ravioli according to package instructions. Reserve 1/2 cup pasta water and drain.
  2. In a large skillet, cook bacon until crispy. Remove excess grease if needed.
  3. Add garlic to bacon and sauté 30 seconds until fragrant.
  4. In a bowl, whisk together egg yolks, whole egg, Parmesan, heavy cream, and black pepper.
  5. Add cooked ravioli to the skillet and toss with bacon.
  6. Remove skillet from heat and quickly stir in egg mixture, tossing constantly to create a creamy sauce.
  7. Add reserved pasta water gradually if needed to thin sauce.
  8. Garnish with parsley and serve immediately.

Notes

For extra authenticity, use fresh ravioli. Be careful not to overheat the eggs to avoid scrambling.
