- 12 oz cheese ravioli (fresh or frozen)
- 6 slices bacon, chopped
- 3 cloves garlic, minced
- 3 large egg yolks + 1 whole egg
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/2 tsp black pepper
- Salt to taste
- Optional: parsley for garnish

- Cook ravioli according to package instructions. Reserve 1/2 cup pasta water and drain.
- In a large skillet, cook bacon until crispy. Remove excess grease if needed.
- Add garlic to bacon and sauté 30 seconds until fragrant.
- In a bowl, whisk together egg yolks, whole egg, Parmesan, heavy cream, and black pepper.
- Add cooked ravioli to the skillet and toss with bacon.
- Remove skillet from heat and quickly stir in egg mixture, tossing constantly to create a creamy sauce.
- Add reserved pasta water gradually if needed to thin sauce.
- Garnish with parsley and serve immediately.
Notes
For extra authenticity, use fresh ravioli. Be careful not to overheat the eggs to avoid scrambling.
