Ingredients

  • 1 cup feta cheese, cut into small cubes
  • 1 cup mixed olives (Kalamata, green, or your choice)
  • 1 cup cherry tomatoes
  • Fresh basil or mint leaves
  • 23 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • Toothpicks or small skewers

Instructions

  1. Assemble each skewer by threading one olive, one cube of feta, and one cherry tomato. Add a basil or mint leaf if desired.
  2. Place the finished skewers onto a serving plate.
  3. Drizzle lightly with extra virgin olive oil.
  4. Sprinkle with oregano and black pepper.
  5. Serve immediately or refrigerate for up to 2 hours before serving.

Notes
