- 4 cups chicken or vegetable broth

- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery, and sauté until tender.
- Sprinkle in flour and stir well to form a roux. Cook for 1–2 minutes.
- Gradually whisk in the broth until smooth. Add potatoes and bring to a gentle boil.
- Reduce heat and simmer until potatoes are fork-tender, about 20 minutes.
- Stir in milk and season with salt and black pepper. Simmer another 5 minutes until creamy.
- Serve warm, garnished with parsley. Pair with crusty bread for the perfect old-fashioned meal.
Notes
