Instructions

  1. Whip the cream: In a large bowl, whip the heavy cream and vanilla until soft peaks form. Set aside.
  2. Make pumpkin filling: In another bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, and mascarpone. Mix until smooth.
  3. Fold and chill: Gently fold whipped cream into the pumpkin mixture. Chill for 15–20 minutes while you prepare the coffee dip.
  4. Dip and layer: Mix espresso with coffee liqueur (if using). Quickly dip each ladyfinger and arrange in a layer in a 9×9-inch dish. Spread half the pumpkin mixture over. Repeat with another layer of dipped ladyfingers and remaining cream.
  5. Chill: Cover and refrigerate for at least 6 hours or overnight for best flavor.
  6. Serve: Dust with cocoa powder or cinnamon before serving. Add crushed gingersnaps or pecans for texture if desired.

Notes
