- 8 oz cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1 tsp pumpkin pie spice
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 8 oz semi-sweet chocolate, melted
- Optional toppings: crushed graham crackers, sprinkles, or drizzle of white chocolate
Instructions
- In a bowl, beat cream cheese until smooth. Add pumpkin puree, pumpkin pie spice, powdered sugar, and vanilla extract. Mix until well combined.
- Fold in graham cracker crumbs until mixture can be formed into balls.
- Roll mixture into 1-inch balls and place on a parchment-lined tray.
- Chill in the refrigerator for at least 1 hour.
- Dip each ball into melted chocolate, letting excess drip off, and place back on parchment paper.
- Optional: Sprinkle toppings or drizzle with white chocolate before chocolate sets.
- Refrigerate until chocolate is firm. Serve chilled.
Notes
Can be made a day ahead and stored in an airtight container in the fridge. For a festive touch, add crushed pecans or festive sprinkles.
