Ingredients

  • 400g rice noodles
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 200g chicken breast, thinly sliced
  • 1 medium carrot, julienned
  • 1 bell pepper, thinly sliced
  • 2 tablespoons Ngo Ngae (Sarsaparilla) root, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • ½ cup chicken broth
  • 2 green onions, chopped
  • 1 handful of fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the rice noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable oil in a large wok or frying pan over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the chicken slices and stir-fry until they are no longer pink.
  4. Add the carrot and bell pepper, and cook for another 2-3 minutes.
  5. Stir in the Ngo Ngae root, soy sauce, oyster sauce, and sugar. Mix well.
  6. Pour in the chicken broth and bring the mixture to a simmer.
  7. Add the cooked noodles to the wok and toss everything together until the noodles are well coated with the sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions and cilantro before serving.
