- 400g rice noodles
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 200g chicken breast, thinly sliced
- 1 medium carrot, julienned
- 1 bell pepper, thinly sliced
- 2 tablespoons Ngo Ngae (Sarsaparilla) root, finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- ½ cup chicken broth
- 2 green onions, chopped
- 1 handful of fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
- Prepare the rice noodles according to package instructions, then drain and set aside.
- Heat the vegetable oil in a large wok or frying pan over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chicken slices and stir-fry until they are no longer pink.
- Add the carrot and bell pepper, and cook for another 2-3 minutes.
- Stir in the Ngo Ngae root, soy sauce, oyster sauce, and sugar. Mix well.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the cooked noodles to the wok and toss everything together until the noodles are well coated with the sauce.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and cilantro before serving.
