Description

These spooky Monster Eyeball Cake Pops are the perfect Halloween treat! A fun mix of cake and frosting, dipped in candy melts, and decorated with candy eyes to create creepy (but delicious) eyeballs.


Ingredients

  • 1 baked cake (any flavor, cooled)
  • 1/2 cup frosting (vanilla, cream cheese, or buttercream)
  • 2 cups candy melts (white, red, green, or black)
  • Candy eyeballs (large and small)
  • Red decorating gel or melted red chocolate (for veins)
  • Lollipop sticks
  • Styrofoam block (to hold pops upright)

Instructions

  1. Crumble the cooled cake into fine crumbs in a large bowl.
  2. Mix in frosting until it forms a thick dough-like mixture.
  3. Roll into balls and place on a lined baking sheet.
  4. Insert lollipop sticks and freeze for 20 minutes to set.
  5. Melt candy melts until smooth and dip each cake pop to coat completely.
  6. Before the coating sets, press a candy eyeball in the center of each pop.
  7. Use red decorating gel or melted red chocolate to draw veins around the eyeball for a spooky effect.
  8. Place upright in a styrofoam block and let set completely before serving.

Notes

You can use different colored candy melts for fun monster variations! Store leftovers in the fridge for up to 4 days.
