  • 1/2 cup raspberry jam (seedless)

  2. Cream butter & sugar: Beat butter and sugar until light and fluffy. Add egg, vanilla extract, and lemon zest and mix until combined.
  3. Mix dry ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into wet ingredients until dough forms.
  4. Shape cookies: Roll dough into 1-inch balls and place on baking sheet. Press a thumb or spoon in the center of each cookie.
  5. Fill each indentation with about 1/2 tsp raspberry jam.
  6. Bake: Bake 12–15 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a brighter lemon flavor, add 1/2 tsp lemon extract. Use high-quality raspberry jam for best results. Store cookies in an airtight container for up to 4 days.
