  • 3 very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar (or 1/2 cup for less sweet)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 tsp cinnamon
  • Optional add-ins: chocolate chips or chopped walnuts

  2. In a large bowl, mash bananas until smooth.
  3. Stir in melted butter, sugar, egg, and vanilla until combined.
  4. Sprinkle baking soda and salt over the mixture and mix in.
  5. Gently fold in flour (and cinnamon if using) just until combined.
  6. Fold in optional add-ins if desired.
  7. Pour batter into prepared loaf pan.
  8. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

For extra moisture, replace half the butter with Greek yogurt or sour cream. Banana bread tastes even better the next day. Store covered at room temperature up to 3 days.
