A comforting Japanese-inspired miso soup loaded with chewy udon noodles, tender vegetables, and sweet-savory teriyaki mushrooms. Perfect for a cozy lunch or light dinner.

- 6 cups vegetable broth or dashi
- 3 tbsp white miso paste
- 8 oz udon noodles (fresh or dried)
- 1 cup shiitake mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 cup baby spinach
- 2 green onions, sliced
- Optional: tofu cubes, sesame seeds
Instructions
- Prepare mushrooms: In a skillet, heat sesame oil over medium heat. Add mushrooms, soy sauce, mirin, and sugar. Sauté until glazed and tender, about 5 minutes. Set aside.
- Cook noodles: Boil udon noodles according to package instructions. Drain and set aside.
- Make broth: In a large pot, bring vegetable broth to a simmer. Whisk in miso paste until dissolved (do not boil after adding miso).
- Assemble soup: Add noodles and spinach to the broth. Heat for 1–2 minutes until spinach wilts.
- Serve: Ladle soup into bowls, top with teriyaki mushrooms, green onions, and optional tofu or sesame seeds.
Notes
For a deeper flavor, use homemade dashi instead of vegetable broth. Add chili oil for a spicy twist.
