  • 3 tbsp white miso paste
  • 8 oz udon noodles (fresh or dried)
  • 1 cup shiitake mushrooms, sliced
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1 cup baby spinach
  • 2 green onions, sliced
  • Optional: tofu cubes, sesame seeds

Instructions

  1. Prepare mushrooms: In a skillet, heat sesame oil over medium heat. Add mushrooms, soy sauce, mirin, and sugar. Sauté until glazed and tender, about 5 minutes. Set aside.
  2. Cook noodles: Boil udon noodles according to package instructions. Drain and set aside.
  3. Make broth: In a large pot, bring vegetable broth to a simmer. Whisk in miso paste until dissolved (do not boil after adding miso).
  4. Assemble soup: Add noodles and spinach to the broth. Heat for 1–2 minutes until spinach wilts.
  5. Serve: Ladle soup into bowls, top with teriyaki mushrooms, green onions, and optional tofu or sesame seeds.

Notes

For a deeper flavor, use homemade dashi instead of vegetable broth. Add chili oil for a spicy twist.
