- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) cannellini beans, drained and rinsed
- 6 cups vegetable or chicken broth
- 1 tsp dried Italian herbs
- 1 cup small pasta (ditalini or elbow)
- Salt and pepper to taste
- Optional garnish: Parmesan cheese, fresh parsley

- Add zucchini and green beans, cook 2–3 minutes more.
- Stir in diced tomatoes, beans, broth, and Italian herbs. Bring to a boil, then reduce to a simmer for 15–20 minutes.
- Add pasta and cook until tender, about 8–10 minutes.
- Season with salt and pepper to taste. Serve garnished with Parmesan and parsley if desired.
Notes
This soup stores well and can be frozen before adding pasta. Add spinach or kale at the end for extra greens.
