  • 1 block (200g) feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Place feta cheese in the center of a greased small baking dish or ovenproof skillet.
  3. Arrange cherry tomatoes and olives around the feta. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper.
  4. Bake for 10–12 minutes, until feta is soft and tomatoes start to blister.
  5. Remove from oven and crack eggs over and around the feta. Return to oven and bake for an additional 8–10 minutes, or until eggs are cooked to your desired doneness.
  6. Garnish with fresh parsley or basil before serving. Serve warm with crusty bread or pita.
