Ingredients

- 1 block (200g) feta cheese
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Preheat oven to 400Β°F (200Β°C).
- Place feta cheese in the center of a greased small baking dish or ovenproof skillet.
- Arrange cherry tomatoes and olives around the feta. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper.
- Bake for 10β12 minutes, until feta is soft and tomatoes start to blister.
- Remove from oven and crack eggs over and around the feta. Return to oven and bake for an additional 8β10 minutes, or until eggs are cooked to your desired doneness.
- Garnish with fresh parsley or basil before serving. Serve warm with crusty bread or pita.
