- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 cup small pasta (like orzo or ditalini)
- Fresh parsley, chopped (for garnish)

- Prepare meatballs: In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small meatballs.
- Sear meatballs: Heat olive oil in a large pot over medium heat. Brown meatballs on all sides, about 5 minutes. Remove and set aside.
- Sauté vegetables: In the same pot, add onion, carrots, and celery. Cook 3–4 minutes until softened.
- Add broth and tomatoes: Stir in broth, diced tomatoes, oregano, and basil. Bring to a simmer.
- Cook meatballs: Return meatballs to the pot and simmer 15–20 minutes until cooked through.
- Add pasta: Stir in pasta and cook until tender, about 8–10 minutes.
- Serve hot, garnished with fresh parsley.
Notes
You can freeze uncooked meatballs for later use. For extra flavor, add a splash of Worcestershire sauce to the meat mixture.
