  • 1 tbsp lemon juice or white vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1 cup neutral oil (vegetable, avocado, or light olive oil)

  1. Add the egg, lemon juice (or vinegar), mustard, and salt to a tall jar or blender cup.
  2. Pour the oil on top and let it rest for 30 seconds.
  3. Place an immersion blender at the bottom of the jar.
  4. Blend without moving for 10–15 seconds until the mixture emulsifies.
  5. Slowly lift the blender while blending until thick and creamy.
  6. Taste and adjust seasoning if needed.
  7. Transfer to an airtight container and refrigerate.

Notes

Use room-temperature ingredients for best results. Homemade mayonnaise keeps well in the refrigerator for up to 5 days.
