- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup crispy rice cereal
- 1 cup mini marshmallows
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet mixture until a soft dough forms.
- Fold in rice cereal, marshmallows, and chocolate chips if using.
- Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, until edges are set but centers are still soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Do not overbake—marshmallows melt and create gooey pockets. For extra texture, fold in chopped nuts or white chocolate chips. Serve fresh for the best chewy-crispy contrast.
