- 1 tbsp olive oil
- 1 tbsp butter
- 1 lb boneless, skinless chicken breast or thighs, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes (in oil), chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Sear chicken: In a large pot, heat olive oil and butter over medium heat. Add chicken, season with salt and pepper, and cook until lightly browned. Remove and set aside.
- Sauté aromatics: In the same pot, add onion and sauté until translucent. Stir in garlic, red pepper flakes, and sun-dried tomatoes. Cook for 1–2 minutes.
- Simmer base: Pour in chicken broth and bring to a boil. Return chicken to the pot and reduce to a gentle simmer for 10 minutes.
- Add creaminess: Stir in heavy cream, Parmesan, and Italian seasoning. Simmer another 5–7 minutes until thickened slightly.
- Finish & serve: Add spinach and let wilt. Taste and adjust seasoning. Garnish with fresh basil or parsley and serve warm with crusty bread.
Notes
For extra heartiness, stir in cooked orzo, tortellini, or gnocchi. Swap chicken with Italian sausage for a spicy twist. Leftovers reheat beautifully for lunch the next day!
