Soft, warmly spiced Maple Pumpkin Cookies drizzled with a maple glaze—perfect for cozy fall baking!

- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup pure maple syrup
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and brown sugar until fluffy. Mix in maple syrup, pumpkin, egg, and vanilla.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Drop tablespoonfuls of dough onto the prepared baking sheet.
- Bake for 10–12 minutes or until edges are lightly golden. Cool on a wire rack.
- (Optional) Drizzle cooled cookies with maple glaze: mix 1/2 cup powdered sugar with 1–2 tbsp maple syrup until smooth.
Notes
For a stronger maple flavor, use dark maple syrup. Store in an airtight container for up to 4 days.
