  • 1/4 cup pure maple syrup
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter and brown sugar until fluffy. Mix in maple syrup, pumpkin, egg, and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add dry ingredients to wet ingredients and mix until combined.
  5. Drop tablespoonfuls of dough onto the prepared baking sheet.
  6. Bake for 10–12 minutes or until edges are lightly golden. Cool on a wire rack.
  7. (Optional) Drizzle cooled cookies with maple glaze: mix 1/2 cup powdered sugar with 1–2 tbsp maple syrup until smooth.

Notes

For a stronger maple flavor, use dark maple syrup. Store in an airtight container for up to 4 days.
