- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 tsp salt
- Optional: 1/2 cup chopped pecans or walnuts
Instructions
- Preheat oven: Set oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix wet ingredients: Beat butter and brown sugar until creamy. Add maple syrup, egg, pumpkin puree, and vanilla extract, mixing until smooth.
- Combine dry ingredients: In another bowl, whisk flour, baking soda, spices, and salt.
- Mix together: Gradually add dry ingredients to wet mixture until just combined. Fold in nuts if using.
- Bake: Drop spoonfuls of dough onto prepared baking sheets and bake for 10–12 minutes or until edges are set. Cool on a wire rack.
- Enjoy: Perfect warm or stored in an airtight container for up to 4 days.
Notes
For an extra touch, drizzle cooled cookies with a maple glaze made from powdered sugar, maple syrup, and a splash of milk.
