- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 1 tbsp balsamic vinegar (optional, for depth)
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss carrots with olive oil, maple syrup, balsamic vinegar, thyme, salt, and pepper until evenly coated.
- Spread carrots in a single layer on the baking sheet.
- Roast for 25–30 minutes, stirring halfway, until tender and caramelized on the edges.
- Transfer to a serving dish, garnish with parsley, and serve warm.
Notes
For extra flavor, add a sprinkle of toasted pecans before serving. These carrots pair beautifully with roasted meats or vegetarian mains.
