This Maple-Glazed Nut Roast is a hearty, flavorful vegetarian centerpiece, perfect for festive dinners or a cozy Sunday meal. Packed with nuts, veggies, and herbs, it’s finished with a sweet maple glaze.

- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 red bell pepper, finely chopped
- 1 cup mixed nuts (walnuts, cashews, almonds), chopped
- 1 cup breadcrumbs
- 1/2 cup grated cheddar or vegan cheese
- 2 tbsp soy sauce
- 2 tbsp fresh parsley, chopped
- 2 eggs (or flax eggs for vegan)
- 1/4 cup vegetable broth
- 1/4 cup maple syrup (for glaze)
- 1 tbsp Dijon mustard (for glaze)
- Salt and black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Grease and line a loaf pan with parchment paper.
- Heat olive oil in a skillet and sauté onion, garlic, carrot, celery, and red pepper until softened.
- In a large bowl, combine sautéed vegetables, nuts, breadcrumbs, cheese, soy sauce, parsley, eggs, and broth. Mix until well combined.
- Press mixture firmly into the prepared loaf pan and smooth the top.
- Whisk maple syrup and Dijon mustard together, then brush half over the top of the nut roast.
- Bake for 45–50 minutes, brushing with the remaining glaze halfway through baking.
- Cool for 10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
Notes
This nut roast can be made vegan by using flax eggs and vegan cheese. It also reheats beautifully—just wrap in foil and warm in the oven.
