  • 1/2 cup mango puree
  • 1/2 cup diced fresh strawberries
  • Frosting of choice (buttercream, cream cheese, or whipped cream)

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Mix in sour cream and mango puree until smooth.
  6. Gradually fold in dry ingredients until just combined.
  7. Gently fold in diced strawberries.
  8. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  9. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Frost cooled cupcakes with your choice of frosting and top with fresh fruit or sprinkles to mimic a sunset effect.

Notes

For extra sunset colors, swirl a small amount of strawberry puree into the frosting before topping. Cupcakes can be stored in an airtight container at room temperature for 2 days or refrigerated for up to 4 days.
