- ⅓ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup chopped roasted macadamia nuts
- ⅔ cup heavy cream (plus more for brushing)
- 1 large egg
- 1 teaspoon vanilla extract
- Optional: coarse sugar for topping
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in Butter: Add cold cubed butter and cut it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add Nuts: Stir in chopped macadamia nuts.
- Combine Wet Ingredients: In a separate bowl, whisk together cream, egg, and vanilla extract. Pour into dry mixture and stir just until a dough forms.
- Shape Dough: Turn dough onto a floured surface, gently knead once or twice, and pat into an 8-inch circle. Cut into 8 wedges and place on prepared baking sheet.
- Bake: Brush tops with cream and sprinkle with coarse sugar if desired. Bake for 15–18 minutes, or until golden brown. Cool slightly before serving.
Notes
For a tropical twist, add a handful of white chocolate chips or shredded coconut. Store leftovers in an airtight container for up to 2 days or freeze unbaked wedges for future baking.
