  • 1 tbsp fresh parsley or chives, chopped
  • Lemon zest or lemon juice, to taste

  2. Add onion or shallot and cook until soft and translucent, about 3–4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Toast the rice: Add Arborio rice and stir for 1–2 minutes until lightly toasted.
  5. Pour in white wine and cook, stirring, until absorbed.
  6. Add stock: Begin adding warm seafood stock one ladle at a time, stirring frequently, allowing liquid to absorb before adding more.
  7. Continue until rice is creamy and tender, about 18–20 minutes.
  8. Finish: Stir in lobster meat, remaining butter, Parmesan cheese, and heavy cream (if using).
  9. Season with salt, pepper, and lemon zest or juice.
  10. Garnish with fresh herbs and serve immediately.

Notes

For the best flavor, use homemade or high-quality seafood stock. Add lobster meat at the end to keep it tender. Serve with a crisp white wine like Chardonnay or Sauvignon Blanc.
