Description

This Loaded Potato Soup is rich, creamy, and packed with tender potatoes, crispy bacon, cheddar cheese, and green onions. A comforting bowl of soup perfect for chilly evenings or hearty lunches.


Ingredients

  • 6 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • 2 tablespoons butter
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and garlic, sauté until softened and fragrant.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
  3. Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for texture.
  4. Stir in heavy cream, cheddar cheese, and sour cream. Cook until cheese is melted and soup is heated through.
  5. Season with salt and black pepper to taste.
  6. Ladle soup into bowls and top with crumbled bacon and sliced green onions before serving.

Notes

For a vegetarian version, use vegetable broth and skip the bacon, or substitute with smoked tempeh or sautéed mushrooms. Serve with crusty bread for a complete meal.
