- 6 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 6 slices bacon, cooked and crumbled
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Salt and black pepper, to taste
- 2 tablespoons butter
- 2 green onions, sliced (for garnish)
Instructions
- In a large pot, melt butter over medium heat. Add onions and garlic, sauté until softened and fragrant.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
- Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for texture.
- Stir in heavy cream, cheddar cheese, and sour cream. Cook until cheese is melted and soup is heated through.
- Season with salt and black pepper to taste.
- Ladle soup into bowls and top with crumbled bacon and sliced green onions before serving.
Notes
For a vegetarian version, use vegetable broth and skip the bacon, or substitute with smoked tempeh or sautéed mushrooms. Serve with crusty bread for a complete meal.
