  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Optional toppings: chopped green onions, extra cheese, sour cream

  1. Cook bacon: In a large pot over medium heat, cook bacon until crispy. Remove bacon and set aside, leaving some drippings in the pot.
  2. Sauté onion and garlic in bacon drippings until softened, 3–4 minutes.
  3. Add diced potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  4. Use an immersion blender to partially blend the soup for a creamy texture, leaving some potato chunks.
  5. Stir in cheddar cheese and heavy cream until melted and combined.
  6. Serve hot, garnished with reserved bacon, green onions, and extra cheese or sour cream if desired.

Notes

For a lighter version, substitute half-and-half or milk for heavy cream. You can also add cooked corn or diced ham for extra flavor.
