- 2 lbs baby or Yukon gold potatoes, cut into chunks
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon apple cider vinegar
- Salt and pepper, to taste
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/3 cup chopped green onions
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the Potatoes: Boil potato chunks in salted water until fork-tender, about 10–12 minutes. Drain and cool completely.
- Make the Dressing: In a large bowl, whisk together sour cream, mayo, mustard, garlic powder, vinegar, salt, and pepper.
- Assemble: Add cooled potatoes to the dressing along with bacon, cheddar, and green onions. Toss gently to coat.
- Chill and Serve: Refrigerate for at least 1 hour before serving. Garnish with parsley if desired.
Notes
Best made ahead of time for maximum flavor. You can substitute plain Greek yogurt for sour cream, or add chopped dill pickles or red onion for a twist!
