- 2 pounds russet or Yukon gold potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup sour cream
- 1/4 cup milk (more if needed for creaminess)
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, sliced
- Salt and pepper, to taste
- Optional topping: extra cheese and bacon bits
Instructions
- Boil potatoes in salted water until tender, about 15β20 minutes. Drain and return to the pot.
- Add butter, sour cream, and milk, then mash until smooth and creamy.
- Stir in cheddar cheese, bacon, and green onions until evenly mixed.
- Season with salt and pepper to taste.
- For a baked version, transfer to a casserole dish, top with extra cheese and bacon, and bake at 375Β°F (190Β°C) for 10β15 minutes until bubbly.
