- 4 large russet potatoes, peeled and diced
- 2 cups broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 4 slices bacon, cooked and crumbled (optional)
- Salt and black pepper, to taste
- Green onions for garnish

- Cook bacon (optional): In a large pot, cook bacon until crispy. Remove and set aside, reserving 1–2 tbsp bacon fat in the pot.
- Sauté aromatics: Add onion and garlic to the pot and sauté 2–3 minutes until softened.
- Add potatoes & broth: Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Add broccoli: Add broccoli florets and cook 5–7 minutes until tender.
- Blend (optional): Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for heartiness.
- Add cream & cheese: Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Serve: Garnish with crumbled bacon and green onions. Adjust seasoning with salt and pepper to taste.
Notes
For a vegetarian version, omit the bacon. You can also swap in half-and-half for heavy cream to reduce richness, or add more broccoli for extra veggies.
