- 4 large russet potatoes, peeled and diced
- 4 slices bacon, cooked and crumbled
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika (optional)
- Green onions and sour cream for garnish

- Cook bacon: In a large pot, cook bacon until crispy. Remove and set aside, reserving 1–2 tbsp bacon fat in the pot.
- Sauté aromatics: Add onion and garlic to the bacon fat and sauté 2–3 minutes until softened.
- Add potatoes & broth: Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Blend soup: Use an immersion blender to partially blend the soup for a creamy texture with chunks remaining (or transfer half to a blender). Stir in heavy cream.
- Add cheese & bacon: Stir in shredded cheddar and crumbled bacon (reserve a little bacon for garnish). Cook 2–3 minutes until cheese melts.
- Serve: Garnish with green onions, sour cream, and remaining bacon. Sprinkle paprika if desired.
Notes
For a thicker soup, mash a few potato chunks with the back of a spoon before serving. Can also add cooked shredded chicken for a heartier version.
