Description
This Loaded Baked Potato Salad is everything you love about a baked potato — crispy bacon, sharp cheddar, sour cream, and green onions — mixed with tender potatoes and served cold. It’s the ultimate BBQ or potluck side dish that disappears fast!
Ingredients

- 2½ lbs russet or Yukon gold potatoes, scrubbed and cubed
- ¾ cup sour cream
- ½ cup mayonnaise
- 1½ cups shredded sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- ½ cup chopped green onions (plus more for garnish)
- Salt and pepper, to taste
- Optional: extra bacon or cheese for topping
Instructions
- Cook the Potatoes: Place cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 10–12 minutes. Drain and let cool completely.
- Make the Dressing: In a large bowl, mix sour cream, mayonnaise, salt, and pepper until smooth.
- Combine: Add cooled potatoes, cheddar, bacon, and green onions to the bowl. Gently fold everything together until coated.
- Chill & Serve: Cover and refrigerate for at least 1 hour. Garnish with extra bacon, cheese, and green onions before serving.
Notes
For a lighter version, substitute Greek yogurt for some or all of the sour cream. Best served chilled and enjoyed within 3 days. Pairs well with grilled meats or sandwiches.
