Description

Ingredients

  • lbs russet or Yukon gold potatoes, scrubbed and cubed
  • ¾ cup sour cream
  • ½ cup mayonnaise
  • 1½ cups shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • ½ cup chopped green onions (plus more for garnish)
  • Salt and pepper, to taste
  • Optional: extra bacon or cheese for topping

Instructions

  1. Cook the Potatoes: Place cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 10–12 minutes. Drain and let cool completely.
  2. Make the Dressing: In a large bowl, mix sour cream, mayonnaise, salt, and pepper until smooth.
  3. Combine: Add cooled potatoes, cheddar, bacon, and green onions to the bowl. Gently fold everything together until coated.
  4. Chill & Serve: Cover and refrigerate for at least 1 hour. Garnish with extra bacon, cheese, and green onions before serving.

Notes

For a lighter version, substitute Greek yogurt for some or all of the sour cream. Best served chilled and enjoyed within 3 days. Pairs well with grilled meats or sandwiches.
