This Light & Creamy Cauliflower Soup is velvety smooth without using heavy cream. Packed with flavor, it’s a healthy and cozy soup that makes the perfect light meal or side dish.

- 1 large head of cauliflower, cut into florets
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1 cup unsweetened almond milk (or other light milk of choice)
- 1/2 tsp ground nutmeg
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
- Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes until tender.
- Blend the soup with an immersion blender until silky smooth.
- Stir in almond milk, nutmeg, salt, and pepper. Simmer for 5 more minutes.
- Serve hot, garnished with parsley or chives.
Notes
For extra creaminess, stir in a spoonful of Greek yogurt before serving. This recipe is naturally gluten-free and vegetarian.
