Description

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup LIBBY’S® 100% Pure Pumpkin
  • ⅓ cup water
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and spices.
  3. In another bowl, whisk oil, eggs, pumpkin, water, and vanilla until smooth.
  4. Add wet ingredients to dry ingredients and mix just until combined. Do not overmix.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
