- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- ½ cup vegetable oil
- 2 large eggs
- 1 cup LIBBY’S® 100% Pure Pumpkin
- ⅓ cup water
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and spices.
- In another bowl, whisk oil, eggs, pumpkin, water, and vanilla until smooth.
- Add wet ingredients to dry ingredients and mix just until combined. Do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Notes
This pumpkin bread keeps well wrapped at room temperature for up to 3 days or in the refrigerator for up to 5 days. You can also freeze slices individually!
