- 1 tbsp olive oil or coconut oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1 large sweet potato, peeled and cubed
- 1 cup red lentils, rinsed
- 1 can (400 ml) coconut milk
- 2 cups vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions
- Heat the oil in a large pot over medium heat. SautΓ© the onion for 3β4 minutes until translucent.
- Add garlic, ginger, curry powder, cumin, and turmeric. Stir for 1 minute until fragrant.
- Add sweet potato, lentils, coconut milk, and vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 25β30 minutes, or until lentils and sweet potatoes are tender.
- Season with salt and pepper. Adjust consistency with a splash of water if needed.
- Serve warm over rice or with naan, and garnish with fresh cilantro.
Notes
