- 2 tbsp lemon zest (from about 2 lemons)
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- For Coating
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and granulated sugar until light and fluffy, about 2–3 minutes.
- Add eggs, vanilla, and lemon zest; beat until smooth.
- Whisk together flour, baking powder, baking soda, and salt in a separate bowl, then gradually mix into the wet ingredients until a soft dough forms.
- Roll dough into 1–inch balls, then roll each in powdered sugar to coat completely.
- Place on prepared baking sheets 2 inches apart and bake 10–12 minutes, until edges are lightly golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra lemon punch, add 1–2 tbsp fresh lemon juice to the dough. These cookies can be stored in an airtight container for up to 5 days or frozen for longer.
