Instructions
Instructions
- Cream butter and sugars: Beat softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add wet ingredients: Mix in egg, vanilla extract, and lemon zest until combined. Add lemon juice if desired.
- Combine dry ingredients: Whisk flour, baking soda, and salt. Gradually add to wet mixture and mix until just combined.
- Gently fold in blueberries, being careful not to crush them.
- Chill the dough (optional): Refrigerate 15–20 minutes for thicker cookies.
- Bake: Scoop dough onto a lined baking sheet and bake at 350°F (175°C) for 10–12 minutes until edges are lightly golden and centers set.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
Use fresh blueberries for best results; if using frozen, do not thaw to prevent color bleed. Add extra lemon zest for a stronger citrus flavor. These cookies can be drizzled with a simple lemon glaze for a pretty finishing touch.
